Amoy - Cold Shredded Chicken
Ingredients: 

Chicken 1pc, carrot 100g, cucumber 1pc, sauteed white sesame seeds 1tbs.

Seasoning:

Amoy Gold Label Light Soy Sauce 3tbsp, Amoy Oyster Sauce 1tbsp, Amoy Pure Sesame Oil 2tbsp, white vinegar 1tbsp, Sugar 1/2 tsp

Marinade :

Salt tsp, Shaoxing wine 2 tsp.

Method:

1 - Remove the viscera from the chicken, rinse and dry, marinate the skin and cavity of the chicken for 1 night in the refrigerator.
2 - Steam the chicken for 35 minutes with medium heat, then put it in the ice water and drain it.
3 - Peel the cucumber and the carrot, cut into thin strips and put into a bowl, add the seasoning and put into a bowl, add the seasoning and mix, put in the refrigerator for 15 minutes  
4 - Use two forks to shred the chicken meat, add to a large bowl along with cucumber and carrot and mix well. Finish with a sprinkling of white sesame seeds.
